Blueberry-Banana Oatmeal Pancakes (Oil-Free)

Lazy off-day mornings are meant for sleeping in and for putting the worries of your week behind you. They’re also meant for whipping up your favorite homemade pancake recipe and enjoying a nice, relaxing breakfast to start off the day.

With that in mind, I’d like to share with you my favorite pancake recipe that’ll surely have you coming back for seconds. The recipe below is a slight variation from the recipe included in my latest book, The Empty Medicine Cabinet. The only difference is the type of flour being used. Here, I use oat flour, and in my book, I use whole-wheat flour. Nevertheless, both versions are the perfect way to start off your morning.


Oatmeal Blueberry-Banana Pancakes




Prep time: 5 minutes
Cook time: 2-3 minutes

Ingredients:
2     cups oat flour (made with old-fashioned oats)
1     teaspoon baking soda
1     teaspoon baking powder
2     cups almond or soy milk
2     tablespoons unsweetened applesauce
1/3  cup frozen blueberries
1      banana, cut into slices

Directions:
To make oat flour, place 2 cups of old-fashioned oats in a blender. Blend on high until fine flour-like consistency is obtained.
            Add flour, baking soda, and baking powder together in large bowl. Sift ingredients until well mixed. Add almond milk and applesauce to bowl. Mix until smooth consistency forms. Add blueberries to the mixture and stir well. You should have a smooth batter at this point.
            Drop 2 heaping tablespoons of batter onto a nonstick cooking pan or griddle on medium heat. Flip when batter starts to bubble. Cook opposite side for approximately a minute and remove. Place finished pancakes in oven at 200 degrees to keep warm while cooking remaining pancakes. Pancakes should be fluffy and delicious. Serve topped with sliced bananas and 100 percent pure maple syrup. Enjoy!
